Yorkshire Greening Apple (Goose Sauce)
Included in the catalogue of William Perfect of Pontefract in 1769, as both its names suggest, this was the apple of choice to accompany the Christmas Goose;'greening' is synonymous with 'souring' and is descriptive of its intensely tart flavour.
